Register as an Dietitian
Monday 4th October 2010
A diet rich in walnuts and walnut oil may help prepare the body to deal better with stress, according to new research, which may interest those seeking a dietician job in the UK.
Penn State researchers sought to establish how such foods, which contain polyunsaturated fats, influence patients' blood pressure at rest and under stressful conditions.
Reported in the Journal of the American College of Nutrition, the scientists found that consumption of both walnuts and its derivative oil lowered blood pressure responses when participants were asked to give a speech as a stressor.
Sheila West, associate professor of biobehavioural health, explained the important role that can be played by those holding a dietician job in light of the findings.
"People who show an exaggerated biological response to stress are at higher risk of heart disease. This study shows that a dietary change could help our bodies better respond to stress," she said.
Last week, findings from a US Department of Agriculture study revealed that a diet rich in blueberries may help patients combat atherosclerosis, otherwise known as hardening of the arteries.
